If you are properly frozen then no it doesn't hurt when they are prepping the tooth for a crown. If the dentist also makes you a temporary crown while the lab is fabricating your permanent crown then no the tooth won't hurt while you wait.
Tooth erosion is a huge topic and well addressed at this website:

In simple terms - quit sipping on pop/soda/juice (if you have to drink it consume it all at once or use a straw placed towards the back of your mouth (avoiding all your teeth), Lighten up on your toothbrushing or switch to a powered brush either way holding the brush in your fingertips rather than in your fist will lighten the pressure against the tooth. If you grind your teeth switch to using a nightguard/bruxing appliance (see your dentist).
Is it sore getting crowns and how do you prevent tooth erosion?
No it does not hurt as the Dr. will give you lots of Novocaine. What is strange is the grinding noise and vibrations as he works on your teeth.
